Our Story
At The Bakery, we believe that great bread demands time — time for the dough to develop flavor, for the crust to form in a blazing-hot oven, and for the community to gather around something made with care.
Located on South Main Street in the heart of Norfolk, we bake every morning using a combination of wild sourdough starters and carefully selected flours. Our pastries are laminated by hand, our coffee is sourced from independent roasters, and our door is always open to anyone looking for a moment of warmth.

The Process
Our process is simple but exacting. We mix only flour, water, salt, and starter. We let the dough rest and develop on its own timetable. We bake in a deck oven until the crust sings.
Flour and water rest together before salt and starter are added. This develops gluten structure naturally.
The dough rests for hours, developing flavor and strength through natural wild yeast activity.
Each loaf is hand-shaped and given its final rise before entering the oven.
Baked at high heat in a deck oven, then cooled completely to preserve crust and crumb.
